Tokaj, Hungary’s most famous wine region, stretches before me. I’m standing on the terrace of a new winery, admiring its commanding view of the area where so much has remained the same over the centuries, but I’m also marvelling at how much is changing. This £4.6m winery was built to produce dry, off-dry and sparkling wines for Château Dereszla, owned by Patrick d’Aulan of Ch Sansonnet in St-Émilion. ...
