CHARDONNAY
Carson believes that his Reserve Chardonnays are best drunk at 4-8 years old. He uses a high proportion of ambient yeasts, no enzymes, natural settling and an increasing proportion of 500l-litre casks in place of 225-litre barriques – in fact he used nothing but for the impressive 20005 Reserve.
