The recent Cebreros denomination (DOP) represents one of the last great revolutions in Spain for top-quality wines. Its history, in a way, reminds me of that of Priorat because both were wine regions that not long ago were on the brink of disappearing but which have been revived in recent decades to present us with great, unique wines.
