Vinification
The IPTs (total tannin counts) of the 2010 red bordeaux just harvested were absolutely enormous. But, unlike the gentler, more progressively evolved, tannins of 2009, these tannins were the result of hydric stress, of the dehydration of the juice that left more thick, hard skins than juice.
