Michel Chapoutier is one of those wine producers who, like Randall Grahm of Bonny Doon, just love to talk. This makes them perfect as quote machines for us wine writers. (In fact our colleague Linda Murphy said she had to put a cap on the number of Grahm quotes allowed when she was wine editor of the San Francisco Chronicle.)
