Tasting hundreds of samples isn't always the best way to get to know wine. At a recent dry white bordeaux seminar organised by the Institute of Masters of Wine in London, the wines were few but the insights were plentiful.
Pierre-Olivier Clouet of Ch Cheval Blanc began. Their journey towards a dry white wine began in 2006 when they purchased an 8.5 hectare estate in front of the property then known as Ch Tour du Pin.
