The subject of food-and-wine matching is one that intrigues enough of us to have spawned books, websites, scientific research, schools of sommeliers and some pretty ornery debate. Do we really now need wine configurators?
I’m more than a bit cynical about digital wine-and-food pairing apps. I’ve looked at a few in the past and found that they offer up pearls of wisdom such as, ‘Salad – fragrant white wine’, or ‘Beef – Cabernet Sauvignon’.
