Nacho (short for Ignacio) Campus seen here is a Mexican sommelier and ex IT professional in charge of the wine list – or at least that part of it that is not selected for the group as a whole – at the Seven Dials’ branch of steak-heavy restaurant Hawksmoor in London’s Covent Garden. His journey into wine started a bit like mine – too many hours spent in wine shops – and includes, unlike mine, a stint working in a London bar, now closed, specialising in high-end tequila.
