After Legeron and Maule had opened the NEW11 – Natural European Wine 2011 – conference, the stage was taken by Claude and Lydia Bourguignon, well known for their consultancy to high-profile clients such as Domaine de la Romanée-Conti and Anne-Claude Leflaive in Burgundy, Huet in the Loire, Selosses in Champagne as well as Elio Altare in Barolo and Spain's most illustrious estate, Vega Sicilia.
The Bourguignons worked at one time for INRA, the French Institut National de la Recherche Agronomique (it was there that they met), Claude as an agronomist and microbiologist and Lydia as a researcher in food engineering...
