Here on purple pages, especially in your turn, we have been a bit preoccupied by the exciting new table wines now emerging from port country. But south of the Douro Valley and rather closer to the coast are Portugal's two longest-serving sources of table wine, Bairrada and Dão. Dão in particular is undergoing the most dramatic modernisation of any wine region I can think of – and about time too.
