CLAI, Buje (northwest Istria)
Giorgio Clai, retired restaurateur from Trieste, has 6 ha of vineyards (and 3 ha of olive trees). Clai follows organic and biodynamic principles, and his wines are made with spontaneous fermentation, no additional enzymes, no selected yeasts and no filtering.
