Domaine de Chevalier – 1916–2004

The following notes on six vintages of the white wine and 44 of the red were as taken last Dec 05. The wines were served blind in flights as shown below, the flights going from very old to very young. Afterwards there was some discussion about the merits of this. Jan Paulson of Rare Wine (www.rare-wine.com) argued that the old wines should have been treated to more aeration and that it would have been better perhaps to go from young to old – particularly in this case where the young wines are hardly the most alcoholic and palate-stunning.
