How to make (NZ) Chardonnay

The North Island seaside town of Gisborne earlier this year hosted not only a sparkling wine symposium but also a multi-part and quite technical masterclass on New Zealand Chardonnay, with the main emphasis on winemaking choices and techniques used with this variety that is so malleable in the winemaker's hands. This photo shows the formal Powhiri (welcome) we were given on arrival at the airport.
