The North Island seaside town of Gisborne earlier this year hosted not only a sparkling wine symposium but also a multi-part and quite technical masterclass on New Zealand Chardonnay, with the main emphasis on winemaking choices and techniques used with this variety that is so malleable in the winemaker's hands.
