Julia tastes the results of the AWRI's outstanding research into flavour compounds but can't ignore this niggling question.
The Australian Wine Research Institute certainly believe that research leads to more distinctive wines. Con Simos, the AWRI’s group manager of industry development and support, is a winemaker by training but says of himself he is ‘not allowed to do research – they won’t let me into the labs’. His role is to communicate the outcomes of the Institute’s high-level and technologically advanced research to Australian growers and winemakers.
