Earlier this year I bought a Eurocave wine cabinet, thereby finally providing controlled storage conditions in my home. I am now gradually populating it with bottles, which I'm selecting according to three overriding criteria. Firstly, they must not be expensive (I adhere to Steven Spurrier's philosophy of never spending more than £50 a bottle) and secondly they must be potentially capable of ageing for decades.
Port is an ideal candidate, along with Riesling and Northern Rhône Syrah – according to my burgeoning collection at least – which reveals my third rule: that they must suit my tastes!
