Le Grappin’s freezing cellar in the centre of Beaune was previously a gunpowder store with deep wells supplying ample humidity to moderate further the modest (13%) alcohols here. A 30,000-bottle production with permanent contracts with suppliers from the Mâconnais (and Beaujolais) up to the Côte d’Or. All parcels are organically farmed. The largest parcel is their Mâconnais Blanc (some 50 barrels), the smallest their 0.1-hectare (0.25-acre) Savigny-lès-Beaune Blanc.
