Why isn't there more demand for organic wine?

Inspired by this Long Read on natural wine in last Tuesday's Guardian, Saussignac winemaker Caro Feely of Château Feely* wrings her hands.
With the evidence piled up about why you should choose organic wine, why do people continue to drink chemically farmed wine? It's a question that has perplexed me for a while.
