Last August, in my researches for Jerez unfortified – a glimpse into the future, I visited the vineyards of Jerez and Sanlúcar de Barrameda, and tasted in the various Grupo Estévez wineries and ageing cellars, with walking encyclopaedia Eduardo Ojeda.
