Two successful food pairings

As an end-of-week folderol, allow me to share a couple of particularly successful food and wine matchings I’ve encountered recently.
The first was with a dish that might be regarded as quite a challenge for wine lovers, and for those without much of an appetite. As host to the André Simon book award committee recently, Nick found himself without time enough to cook lunch for them, so ordered a baked dish involving salt cod, potatoes, black olives, hard-boiled eggs, olive oil and lots of onions (perhaps Rodrigo Mainardi of Sao Paolo knows the name of this dish) from the guys...
